Peanut butter cookie recipe


My sister in law gave me this recipe and every time I bake them I get asked for a copy of it! They are so easy and delicious - last week I took them to some friends in VA and while arranging them on a plate I gave a broken piece to little Lily. She's pictured at left hopefully looking for more broken pieces:-) Anyway I thought I would post it on here so anyone could try them - they are also gluten free - those of you who have gluten free family or friends know they can be hard to bake for so this recipe is great for them as well.

1 cup peanut butter
1 cup sugar
1 egg
1 tsp vanilla

Preheat oven to 350. Mix all ingredients together and roll in balls. Roll the balls of dough in sugar, place on a greased cookie sheet, and flatten with a fork. Bake for 10 - 12 minutes. Makes about two dozen. Last time I made them I experimented with stirring in chocolate chips, then just placing teaspoonfuls of the dough on cookie sheets and baking. They came out delicious - a success:-)

  1. I can testify these are amazing cookies. I can't believe it's just 4 ingredients and for some reason, they really taste and feel like they have some flour in them. Thanks for making us cookies, Stefanie. We finished them in 2 days. ;-)
